Recipe:

4 large herrings

1oz. butter seasoning
25 g. butter seasoning
3 teaspoons tomato puree

4 tablespoons single cream or top of milk

1.    Clean, wash and fillet the hearings (see below).

2.    Cut the fillets into two.

3.    Divide the butter equally into eight pieces.

4.    Place a piece of butter of butter on each fillet and roll up with skin side outside.

5.    Pack upright into a casserole and season well.

6.    Mix the mustard, tomato puree and cream to a smooth sauce and pour over the fish.

7.    Bake until tender. Serve as a hot or cold hors d’oeuvre garnished with parsley.

To fillet herrings: slit the under-side of the herrings, turn and place cut side downwards on to a board. Run your finger or thumb down the backbone very firmly, turn over, lift away the backbone, then cut the fish into two fillets.

To remove the smell of fish after handling: Rub the hands with a little dry mustard then wash in the usual way, the smell goes completely.

Use sourced cream or yogurt
Cooking time: 30 minutes
Preparation time: 15 minutes
Main cooking utensil: covered casserole
Oven temperature: moderate to moderately hot (350 – 375 F..180 – 190 C., Gas Mark 4 – 5)
Oven Position: Center
Serves: 4
