Prawn Cocktail

Ingredients

100g. prawns (weight when skinned)

Lettuce

4 tablespoons mayonnaise

½ 1 tablespoon tomato ketchup

1 teaspoon Worcestershire sauce (this can be increased up to 1 tablespoon if you want a more piquant flavor; or use a few drops chilli sauce or soy sauce.)

2 tablespoons thick cream seasoning

Instructions

If using frozen prawns, put them for 1 minute in hot water and the skins (or shells as they are often called) come away quickly and easily. Leave a few whole for garnish.

Blend all the ingredients together for the dressing.

Toss the prawns in the dressing.

Shred the lettuce very finely, for it has to be eaten with a spoon.

Put the lettuce into the glasses, top with the prawns and garnish with the reserved whole prawns as in the photograph.

Serve with brown bread and butter and lemon.
